Overnight oats are an excellent way to meal prep before your morning rush. With this recipe you can make multiple days worth of delicious breakfasts packed with healthy fats from peanut butter, and the benefits of high fiber from steel cut oats.

Water
4 cup
Steel cut oats
2 cup
Natural peanut butter
4 tablespoon
Cocoa Powder
3 teaspoons
Salt
1/4 teaspoon
Cocao nibs
1 teaspoon
Shaved coconut (omit for Low FODMAP)
1 teaspoon
Strawberries, sliced (about 4-5)

Combine water, oats, cocoa powder and salt in a 5-6 quart slow cooker.

Turn heat to low. Cook with lid on until the oats are tender, ~7-8 hours.

Once cooked, portion into 1 cup servings and top with cacoa nibs, shaved coconut, and sliced strawberries.
